Fried noodles

What do you need?
- 1/2 medium sized cabbage (1 cabbage cost approx $0.90, sliced horizontally)
- 2 eggs
- Chicken sliced thinly (optional to marinate)
- Fresh Shitake mushroom sliced thinly (Can use dried mushroom but remember to wash, soak in water, dry with kitchen towel before use)
- Chinese sausage sliced thinly (Can use hotdog)
- Frozen minced garlic in oil
- Soya sauce (light and dark), pepper, sesame seed oil
- Dried instant noodle (Cintan mee pok)

How to do it?
Put water in pan and add 2 teaspoon of cooking oil (this prevent the noodles from sticking)
When boil, add noodles and cook until soft (don’t overcook)
Remove noodles from water, pour water away and heat pan until pan is dry.
When pan dries, add chinese sausage into pan (no need oil)
Cook over very low heat and oil will be purged out of the sausage. When sausage brown, remove and put aside.
Crack egg into pan (don’t need to add oil because pan will have oil) and make scramble egg, when cooked, remove and put aside

Add frozen minced garlic in oil.
Wait for oil to melt
Add a bit of corn flour to meat/seafood before adding meat/seafood into pan to stir fry together.
Add chicken, fry garlic and chicken until 70% cooked
Add cabbage and mushroom, stir fry
When cabbage soften, add 1/4 cup water, add noodles
Add light and dark sauce, pepper, cover and slowly cook until water dries up (leave a bit of water)
Add egg and chinese sausage, mix well
Add sesame seed oil and serve
